    This looks wonderful! But I wonder what to do with all that fat (veg oil or lard) afterwards. Can you strain it and keep in the fridge? (My mom would do that with her โ€œfrench fryโ€ oil and use it again a couple of times and the fryโ€™s were always better using the older oil!) If so, how long?

    Wow that looks so good! I love sweet taters and this is sure to be loved by ME! Lol. Nobody in my family besides me loves sweet taters. YUMMY! And lard is healthy if you get the right kind. It's a good fat.

    If I fry, it's in lard. I like to get my lard from a meat processing shop out in the country. Tastes 100 times better than grocery store lard, Chicken (with milk gravy) and pie crust, etc etc.

    Way over here on the west coast, I use lard in tortillas and tamales. It's good in pie crust, mixed 1/2 and 1/2 with butter. I think this sweet potato thing sounds wonderful.

    I've had these, but the sweet potatoes were precooked. The people doing it said it is easier to get a complete cook without burning the potatoes. It also takes much less time in the oil. They also used coconut oil. The flavor was amazing. I'm gonna have to try it like this to see which way I like them best! Great video!
