The only success I have had with pot roast, where it falls apart, is with a lower oven bake temperature, no higher than 275°, about an hour a pound after prepping and searing. I do not recommend cutting and refrying- should be perfect after standing for 15 – 20 minutes. Making a 4 pounder today (trying 250°). Carnivores- eat that tasty and nutritious fat, but watch out for sneaky carbs in spices and no veggies! My addicition to carbs is getting better. I eat scrambled eggs with all meals, w hard cheese grated- twice a day max, omad 3x a week. Enjoyed your video Chef, and thanks!

We just put a whole steer in our freezer. We were Keto and now we are pretty much Ketovore/Carnivore. Thank you for the great recipes! Being a chef you understand the need for texture, variety and seasoning. No more just "meat" dinners. Love the "breads" and so filling and satisfying. Your are on to something here!

I love chuck, I usually just throw mine in the instant pot for 20 minutes, but the way this looked at the end really makes me want to try this method
