Well, I obvi couldn't be bothered (as flo would always say ;P) to go through all the comments and make adjustments b/c I went with the recipe from the video and from the recipe book that came with my instant pot on this. Flavor was awesome. Everything fall off the bone, so delish, but the presentation of it was a mess. The rice clumped all together and just pooled at the bottom of the bowl in a soft, mush fashion. Oh well. It was still good. I just need to figure out how to make it next time where it's not so wet and the rice doesn't all fall off. Maybe drain the rice an hour before hand and let it dry out a little? I mean has anyone tried it where they don't soak the rice for 8 hours, but maybe 2-4 and see how that turns out? Also, leaving more space in between the meat isn't the most easy since there isn't a lot of room even with a wide, flat-ish bowl that will fit on a trivet in a 6 QT. That would mean I would have to make it in two batches ….
Will try again, though! I can't be defeated! 😛

Flo & Dude: I made this last night for dinner and it was delicious. Per your comment I reduced the time to 45 minutes. Be sure and leave a little space between the pieces of meat so that all the rice gets cooked in liquid.

I can’t find this rice at Yokes or Walmart. Do they carry it at Costco? I discovered that we have a local Oriental market and I’m planning a stop there as soon as I get on that side of town.

I am curious if you have used the other half that you put in the freezer for later. If so, did you defrost fully before rolling in the rice? Or can it be done still a little frozen?

I am anxious to get my IP Smart and am really looking forward to finding a recipe for Pho to try. 🙂

Nice! Finally some Asian recipe videos to view and try in the Instant Pot.  This looks delicious; I love your channel.  Btw, the steam that comes out of the pressure release isn't very hot. 🙂
