Very similar to a traditional Mexican Tinga. I definitely can see cooking the chicken in the sauce, instead of poaching the chicken separately and then adding it in. For the sauce, try out San Marzano tomatoes, and a few chile de árbol peppers for a little extra kick. I’ve tried making the tinga into more of a stew, thinning out the sauce with chicken stock, and it turns out amazing.
One “secret” of mexican home cuisine, is adding a tablespoon or so of chicken bouillon to this types of recipes. Nevertheless, great recipe!
