    I got my instant pot based on your recommendation and LOVE IT! Most of my soups are vegan because that's how I eat during the day – though we do eat a bit of meat at supper. Beans, lentils, squash, kale, rice or wild rice, whatever veggies are in the house, mushrooms and similar seasonings. You are right – there is a lot of flavor and nutrition in the bones – a great use for them. This looks great – really healthy and yummy. My son just made broth with the last of a chicken we'd eaten – just pressure cooked it for about 15 min, then slow cooked it overnight – so much flavor! Then it sat in the fridge to cook and I deboned it & took out the skin and stuff. Seems food goes farther when there is so much flavor. Great video.

We talked a while ago about a build but I haven’t settled on just how I’m going to approach full time van life yet. …still determined and still working on it.

    I haven't seen a video in a while. I'm now in my van full time, and like yourself, had to have my Instant Pot and my Vitamix. I only use them when I'm plugged into shore, but I will be adding solar this summer, so I'll be able to use the Instant Pot when boondocking.
    Thanks for sharing, love the idea of cutting the thighs in half.

    Love it when you cook! I'm going to try this, I have a small Instant Pot(thanks to you) and I always use organic chicken boullion but now I'll try it without. BTW I use a dash of sesame oil, I encourage you to try it! I'm not living in a van (but getting ready) so I'll use fresh onion and garlic…, I know lucky me, the boon of still living in a wonderful community and having access to a great co-op(Willy street co-op in Madison WI)…but I appreciate seeing your 'plan b'. I too use the boned meat, it is how I feed my own bones. I'm not an expert but I do know we need to do that. Thanks for all that you do Joni! Keep those vids coming! ~I hope to meet you one day.
