Oh hell yes. The kathi roll is in my opinion one of the most glorious things to come from the streets of Kolkata, and it's conceptually so simple too. Makes sense that you'd cover it, it totally feels like a you kinda thing.
For the chicken roll I just wanna ask you to try making one with just real thinly sliced raw onions, some cilantro and lime juice, that's typically my favourite configuration for kathi roll style chicken rolls.
Edit: oh also sliced green chili, can't believe I forgot it

For vegetarians/vegans you can use paneer or tofu instead of chicken and it should taste almost as good.

Also, why do you need an opportunity to use up cilantro stems?! They have better flavor and some nice crunch – I mince them into everything.
