    Disagree with presentation side down first. If it goes second or multiple rotations the presentation side benefits from the fat/juices and tends to crispier because the pan does tend to get hotter and hotter. Love your work though.

    anytime someone takes a picture of you, move your head forward. It tightens up your cheeks/neck fat. In addition, for a selfie, hold the phone as far from you as possible, or have someone else take it from farther away.

    Checking in with your channel every so often, and it never ends in eating anything that measures up to what you just cooked. Thanks for that. Notice you cook outside all the time, but I loved seeing you in your kitchen, inside. Love the design of your inside kitchen and was thinking of basing an upcoming remodel on its layout. Is there anything about it that you dont like for every day cooking? I realize there might be aspects of its layout that inhibit filming for your channel, but as far as everyday regular use goes, what do you like, what would you change? Not looking for a comprehensive answer, just bigger points. Something that affects your cooking negatively, or positively. Thanks for daily inspiration!

    OHH I wanna make this so bad. I've seen this made (as David would say 🙄) authentically.. but it's a pretty damn expensive and HELLA time consuming process. And if I think it's too involved/time consuming, IT IS. But from all the different videos I've watched making this authentically, I can tell this hits all the major beats, flavor wise. He missed a few crucial steps (like soaking the tortilla in the consume before adding the cheese and frying, which is what technically makes it a Barria taco, but instead made the whole damn tortilla out of cheese… Which is a whole ass mood…) but you could tell it was intentional. Like he is more making the VIBE of the dish, highlighting the best parts and getting MMMMMMM, instead of following ancient directions that take a billion years for an okay result.

    Also he reminds me of you… Like alot."

    Not a fan of Chorizo, my Gringo palate has a hard time with the excessive spice but this is inspiring. Maybe I could make a more bland version…..the cheese taco shell is extremely intriguing.
