I am a simple girl, i see chef poppy i hit the like.
One thing that both Reddit and chef missed is that you can make infused fat first. This way herbs don't burn but you get the flavor. You can add fried aromatics in the end as a garnish.
I was really hoping for a "he's a super geek" edit when Ben was talking about the PH and bicarbonate of soda, I miss that 🤣

Ben's is close enough to how I make them, but infuse the oil with garlic and rosemary first, strain it and then toss the crispy garlic and rosemary with the finished roasties at the end.

I would challenge anyone to try boiling potatoes from cold or from hot water and then tell me that there's actually a difference that you care about in anything except roast potatoes.

Mixing fats to get the flavor of one and the smoke point of the other makes zero sense. If it's too hot for the olive oil, it doesn't matter that it's cool enough for the goose fat.
