Good afternoon Karen; this recipe is certainly a cold winters day comfort food! I have my grandmothers cast iron tortilla pan which I use often. This casserole is perfect for making quesadillas! I think using the cube potatoes is great idea. That way the potatoes still has texture. It looks so good also.

I really like things a little more on the "saucey" side so this would be the perfect consistency for me. Easy to make, looks and sounds tasty. A great combination.
