    Micheal. The bottom was burnt due to the excessive amount of flour you used on the peel. I use semolina instead of flour and a wooden peel and dont have any issues with burnt bottoms on pizza or calzones. Try it next time and let me know how it works out for you.

    Great video Michael. I will definitely be trying this. My OCD is killing me though. lol. You separated the dough into halves and then halves again but there were only 6 balls on the sheet when you were done. Did you do 2 balls separately or did you redistribute the dough to have 6 slightly larger dough balls? Again, I truly enjoyed the video and look forward to making homemade ricotta. 😋
