I made this cake a few days ago for my sister's birthday on February 18, 2018. I made it the first time last month as a tester because I couldn't believe you could make a delicious fruitcake with three ingredients. It was wonderful. My daughter loved it so much she took half of it to her home. This time I added 1/4 c. apricot brandy, vanilla extract, salt, and spices: cinnamon, nutmeg, cardamon, cloves, ginger and lemon peel. After it cooled, I poked holes in the top with a skewer and brushed on apricot brandy. I glazed it with apricot jam, added whole pecans and glace cherries, and then glazed it again with the jam. I had to take a picture of it because it was beautiful. My sister lives in Missouri, and it arrived at her home today. She loved it! Thank you for sharing this recipe.
I think that cake needed some icing sugar because it wouldn't be cake without it.
Can I add rum or brandy to this mixture.

I've lived in China for 11 years and I'm not much of a cook so we've gone without our Xmas goodies for years (as we can't buy them here ready made). I want to thank OnePotChef for giving me the opportunity to have all my traditional favourites (Xmas pudding, cake, bread sauce etc) as even I can follow your recipes! The whole family (especially my 4 year old who has never been back to my native England for Xmas) is looking forward to scoffing all the grub. Real sincere thanks to you chef for making our Christmas this year!
