keep potatoes that have sprouted, cut them into cubes then plant them in the garden! we did this at the beginning of summer and just harvested a bunch of little new baby potatoes.

This is perfect!! We are of the same mind-quick, simple, healthy meals. Just chopped some potatoes and carrots and threw them in the instant pot because its too hot for the stove/oven. A quick beautiful meal with a side of green beans. Yum!!
I was wondering what happened to your garden lol. Potatoes! Really, it would be sooo hard to keep plants growing in the desert! I have a hard enough time in the Midwest with a porch that faces west. My plants need tons of water to keep going – sometimes twice a day. No worries – you have enough on your plate. Speaking of plates, those mashed potato fries look soooo delicious! I have got to try them.

I'm so jealous! I live in Georgia and there are NO russet potatoes available here. There is a shortage of some sort…. I work at a major grocery store and we have been getting 5lb bags of white potatoes subbed for our russets for the last two months. At least I can get those…. ๐
