I have noticed that wendy puts in a few dollops at a time and pats them down. I was getting air pockets but I started adding more and pushing it into the corners of the pan. I've noticed there is a big difference between powdered egg whites as the base and liquid egg whites. I live in a humid area and the powdered recipe works really well.

By using the recipe on the back of the egg white protein powder everyone can create their own unique recipes. I think the egg whites are tempormental to climate dry vs humid and altitude. I know you will come up with your very own great tasting bread recipe and I can't wait. And I can't wait to try your savory Danish. I also want to make your Danish with jam too.
Can you tap the pan of batter on the countertop a couple times for air pockets? My next try will be French toast style. I'll be baking the bread with cinnamon, nutmeg, and little sweetener in the batter. Thanks for the inspiration Anita.

If you still want to use a metal pan, I think a little parchment on the bottom to help it release easier might be helpful.

I bet warming the Danish in air fryer or your toaster oven will make it perfect ๐ ๐ I find these breads have huge texture changed one get to cool in fridge. ๐ค

Will try using smaller toothpicks for your skewer trick, that was a trick Carnivore's Angel used on her Dutch Baby recipe toward end of baking & it worked.
Have ya tried the 0%fat Fage plain yogurt in a custard recipe?? I like to use it instead of sour cream due to the huge difference of protein macros – maybe I'll give it a try. ๐ค๐

I saw Keto with Sammy, use her hand mixer to break up her cooked chicken in a deep bowl like yours. I had to try it an it worked AMAZINGLY WELL… however make sure to hold your mixer an bowl well so it doesn't try to get away from you.
When you put the dough in the pan, push the dough gently to the bottom and into the corners with your spatula. Do this after every 2 or 3 scoops you add to the pan. I do this and never get air pockets.
