What are the different temperature settings when itโ€™s cooking? Like is it medium high in the beginning until the juices are absorbed?

I lived in the Dominican Republic for two and a half years…long enough to become very familiar with Dominican cooking. I've been looking for recipes and was always left disappointed at what was out there. I stumbled across this site and thought I would give it a try. I followed the recipes for Carne Guisada, Dominican beans, Moro de Guandules, and Tostones, a staple meal I had in the D.R. many, many times. When I served the final product, the verdict from my family was that I scored a home run. Obviously there are some items that you have to swap, but it was pretty close and it certainly passed as a legit Dominican meal. It was a wonderful reminder of the meals that I so enjoyed in my time living overseas. Thanks for making this site and the well made, easy to follow videos!

Thank you very much for your the videos you make. I am Peruvian and all I know is to cook Peruvian food, but now that I am married to a Dominican I struggle to make Dominican food until I starting to follow your recipes. Now my husband loves my Dominican cooking thanks to you.

My trick is to add water 3 times. Add water once let it evaporate til low. Add water again and repeat. 3rd time add tomatoes paste and then onions peppers and any other veggies and it's nice and saucy.
