I love canned chicken, I make half pint wide mouth jars for my cubes of chicken breast because it is a perfect serving for one person. I usually add it to salad.
I so wish i could do this. I started water bath canning last year. pressure canning for some reason im afraid of.

Linda, I thought I read somewhere that the NCFHFP changed the head space to 1 1/4'' for raw packed chicken? This looks amazing. I bet it would be fabulous over some steamed rice or along side of some fried rice for a quick & easy dinner.

Lol I always wear a glove when raw packing too. I don't mind handling a little bit like when making dinner but I don't like doing larger amounts without a glove.
