    That looks AMAZING!! I cant believe someone told your hubby that about the mushrooms. My daughter dont like them either but we LOVE them. I might have to make some of this up when I get some mushrooms on sale!!!

    I have never canned before. My mother used to can lots of things when I was a boy. I can still remember lying in bed at night listening for every jar lid to seal with that 'pop' sound. After watching the past few canning videos you've done, I'm really thinking about investing in a canner, jars and everything necessary to do it. Now, I just need to build up some nerve to actually do it without fearing failure. I like all of your videos. The recent video of the pantry chat was great. It was like sitting down and having a conversation with a friend. I live alone so that video came on a day when I was feeling pretty lonesome. It was a great pick-me-up. I learned a lot just by listening to that one video. Actually, I learn something from every video you produce. Thank you for all that you do. Watching from southern Ohio.

    10lbs chicken leg quarters in the roaster to slow cook overnight. Debone tomorrow and I'll freeze the meat to can later, and freeze the bones to make broth and can later too

    My Grandma Johnson, who held me, I never knew, was a Pasty Chef (100 % Finn). She made them for the miners in Ironwood, MN. I was dreaming up pasties to make for a time, your doing it in canning jars! Pretty cool Home Econ! P.S. To my credit, I did it too! Several Pasty variety.

    Looks good!! Another reason for a lid to buckle is when you release the pressure yourself instead of letting it cool down by itself. I had a friend who would do that because she didn't want to wait for the pressure to come down on its own so she would just pull the weight off. Everyone of her lids would buckle but she figured as long as it seemed to seal it didn't matter. Often though it wasn't a true seal. She finally learned and stopped doing it. Canning is a process. You can't rush it. Those jars need that time to come down naturally.
