    I actually still love Libby's corned beef. It does bring back my childhood. It's comfort food for sure. My mom used to make a soup with Libby's corned beef and potatoes when I was little, and now when I need some comfort I make it for myself.

    I had this often in my younger years in England. It was part of an English breakfast. I thought the idea of doing the brisket from scratch was a great idea, certainly one I will consider. I have a can of it in my pantry right now and this will do nicely for a supper sometime soon! Can't wait to see what's next. Oh, and for suggestions, when we moved to Canada a popular lunch was kraft dinner with hot dogs cut up in the pasta. Thanks!

    You didn't cook the canned corn beef hash long enough. You got to cook it til you get some crispy bits! Idk what anyone says, I PREFER the canned version over homemade/gourmet, it tastes better to me. Homemade/gourmet version tastes good but it doesn't taste the same to me. It tastes like a completely different thing.

    I once opened a can and my dog came running. I got the idea to open one of his cans of Alpo and darned if it wasn't the same stuff. I still love it, but I know now that in a pinch I can grab a can of Alpo and not starve.
