    1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)

    2) Line a 3lb loaf tin with baking paper.

    3) Whisk together 225g softened margarine and 225g caster sugar in a large bowl until light and fluffy.

    4) Add 225g self raising flour, 4 medium eggs (room temperature) and 1tsp vanilla and whisk until combined – (do not overmix).

    5) Scoop the mix into your loaf tin and smooth it out.

    6) Bake for 55-60 minutes.

    7) Drizzle sugar syrup over the loaf while still in the tin (optional).

    8) In a large bowl, gradually whisk together 100g softened unsalted butter and 250g icing sugar until combined.

    9) Add 1tsp vanilla, a sprinkle more icing sugar and 1-2tbsp milk, then whisk until smooth and creamy.

    10) Pipe or spread the icing onto the cooled cake.

    11) Add sprinkles (optional).

    12) Enjoy!
