Well, here I am checking out the ingredients you used. I use all the same in mine and I even use the same ratio of the holy trinity. I do add a couple of bay leaves and tobasco to mine. I don’t see why I couldn’t can mine. I make super dark roux as well. I tend to make my gumbo really thick. If I just add a bit more water I’m thinking it should be okay. I’m so glad I came across your canning video. I always make a huge pot of gumbo and I’m just one person.
