I thought a double espresso should weight near 40mg. But the chains serve near double and the speciality stores serves more than triple that amount

I'd 100% Go to a Shop I can get my Espresso in a real porcelan Cup and Not in the Paper Cup. I really dislike the aftertaste of Paper.
The answer is simple, low caffeine ones arabica, high caffeine ones robusta. Arabica is much better taste than widely available robusta.
I think, it's near to impossible, but con you make a comparison with some coffee shops in Italy (my benchmark) or at least to some shops in US, who serve some real-real espresso 🙂

Can not part of the difference be because of the type of roast on the beans. A lighter roast should mean more caffeine right?

One sample doesn't define "consistency" though, shouldn't that be ten or twenty samples over multiple days to measure that?

Because the specialty's get their beans from the same importer….
Go to a McCafe every day for a week and see how consistent they are. Say what you like but they are – by far – the most consistent F&B business in the world

Aren't they rather inaccurate +/- 12% and over 2 hrs to analyse for a couple of grand in euro? Spectrum analysing would be better
