    My Instant Pot display said “burn” as soon as the cooking time was up. I released the pressure immediately – luckily, everything was cooked through & delicious. Some of the spice mix was indeed burned on a little so I didn’t stir it in & will add more water next time.

    This is actually rather similar to a dish I’ve been making for Thanksgiving for years. I started it as a twist on tzimmes – a dish traditional to Rosh Hashanah. Only I always used cherries instead of the usual prunes.

    It differs from yours in using carrots instead of butternut squash but I never thought to try it in my instantPot! I just baked it in the oven. This will make my cooking this year much simpler! Try using orange juice for the liquid. Yummy!

    Totally made this tonight and it was amazing!! Hubby and I used it for a main instead of a side. I didn't have raisins but I chopped up some figs and it was flipping awesome! Definitely making this again!

    Brittany, do you think baking in foil-covered dish or bean-pot would also work? (I'd rather not get more appliances, never was a fan of crockpots). I think adding a sprinkling of fresh cranberries and thyme might taste and look good too. Maybe a garnish of chopped pecans or pepitas another time.
