I just made this and it's yummy! The only thing I did differently was I used just one pan – a dutch oven – and after sauteing the onions, I added the ginger and garlic and sauteed them for a few minutes and then added the squash. I used an immersion blender to blend everything right in the dutch oven. Clean up was a breeze! Thanks for the great recipe which I'm sure I'll be using quite often.
