    I agree don't use the turkey timer that comes with it, but by removing it before cooking didn't you just opened a spot for the moisture to leak out leading to a dry bird? Especially at 165… pull at 155 and the carry over cooking will ensure it's still moist and flavorful. I know you probably had to say 165 so you don't get people sick, but log rhythmically 155 kills virtually all of pathogenic bacteria.

    My husband and I love your channel and we’re excited to try this recipe for Thanksgiving! Do you have any suggestions for gravy? Usually we would collect the turkey drippings from the pan during a traditional oven cook, but I’m not sure if the same principle applies here. Appreciate any advice you have!
