Butt Veggie Stew – Vegan Instant Pot Recipe

I could have called this recipe “Butternut Squash Stew,” but what’s funny about that? The recipe itself tastes nothing like a butt. Not that I’ve ever tasted a butt.

    LOVE butternut squash. It's nice, cool fall day here in Northern Utah. My husband who travels frequently is home…we're going to have family game night….THIS is going to be perfect for dinner. Can't wait to try it! 😀

    Jill – I got an ipot for Christmas and found you. Then got your cookbook and made this. My husband got SECONDS on his own. I added soy curls and my boys didn't notice it was not real chicken. Thank you and keep rock'in it. I love what you do and I'm so glad I found you :).

    I am not a cook, don't like it, but i am trying to go mostly plant based for health. I am hoping I will like the Instant Pot that will be delivered tomorrow. I have been looking around internet and I think this recipe will be my first, to try. I enjoy your videos and you make it seem easy. Easy is what I need. My meat eating husband and a temporary live-in family member, I am hoping will support my efforts, even if hubby wants to add in some beef or something after my portion. Its a start. 🙂

    I was wondering what do you do to sharpen your knives. your recipes are great. One thing I notice when watching your videos, when prepping for the Instant Pot. Your knife cut clean and fast. especially with garlic and if you do not have a sharp knife garlic can be dangerous. LOL I want to tell you also that my wife and I love your videos. Keep them coming.

    Jill, can I give you a tip to dealing with onions? Keep one or two in the fridge. The cold air decreases that defense mechanisim in them that causes us to cry when we cut into them. So, by refrigerating them and cutting them you'll find yourself crying less.

    This is cooking in my new instant pot right now. Thanks for the recipe! Cooked up my kidney beans earlier! For your extra butternut squash you can make enchilladas…add corn, onions, green chilies, and use a Tomatillo (chili verde) sauce to coat the bottom of the pan before adding rolled enchilladas then pour leftover sauce overtop. Bake. Yummy!

    Looks delish! I think I'll make this next week for dinner. The leftover BS could be oven roasted with a sprinkle of brown sugar, a bit of cinnamon and pinch of salt. Seriously good that way!

    I like making a simple meal with Butternut Squash or Pumpkin (after Halloween) and equal amounts of Rice and Potatoes; the base stock is made from Onion, Celery, Carrots, Bell Pepper, your favorite spicy pepper, then add Garlic and spices to flavor.  Throw in some green beans if you'd like.
    I make this in bulk and refrigerate.

    Gorgeous food!  Plant based food just makes my eyes dance!  About your leftover squash,…. try steaming with our without some or all of the following…a sweet potato/Yukon gold potatoes, onion, garlic, turnip, carrot, parsnips..whatever and make a root veg mash!  Add almond milk and some seasonings of your choice.  YUM! This can go underneath a veg sauté of whatever you like to sauté up in a pan.   (this is exactly how my recipes roll…lol)

    The IPot strikes again! Leftover bs- a pie! It's good with rice too. I've thrown it into my veggie burgers mainly because I didn't want it to go to waste. I've thrown it into my curries and had it over rice. Once in enchiladas but it was just ok. The number one way I make bs is baked french fries.

    Take the squash and simmer it in veggie broth till Al Dente.  Drain and dry.  Saute (water saute if you must) one chopped onion. Chop and saute (in water IF you must) one red bell pepper.  Chop and fry ONE POUND OF BACON!  Add 1 cup diced ham!  THEN SAUTE THE WHOLE THING TOGETHER IN REAL BUTTER!!!!!!!!!  But that's just what I would do with the left over BUTT-SQUASH.
