I know nothing about cooking to be fair, but I'm very suspicious of the "ripening" bananas in an oven advice. The first thing is that "ripen" should probably have huge air quotes around it, because the underlying process is utterly different to the enzymatic process of normal ripening. In particular, you seemed to judge whether the bananas were sufficiently ripened by seeing a few strips of black on them, just like you were judging the ripeness of a normally ripened banana. But the most reliable-looking sources on the internet say that if you "ripen" bananas in the oven, you should bake them until they are totally black instead. And also they specifically said that it's not really ripening them, and that it was a poor substitute for real ripening — i.e. a good last resort measure, but not something to be considered equivalent.

I was about to write a rant about the "how to measure flour accurately by volume" part of the video is rendered obsolete by accurate digital scales ubiquitously available these days, but you're hooking up us digital scale nerds as well!! The best way to ripen bananas is to let them stay on the counter till the skin darkens. Way more flavourful and custardy

I have a theory on a lack of frozen bananas in the stores. I don't know about you, but I've never seen frozen avocado slices or mango slices or orange pieces either. So it might have to do with the peel/shell of the plant, that's it's just too expensive or otherwise not economically viable to peel all of this stuff.
Just a thought.

I would have thought that in 2022 even the most modest ordinary cook would have moved to weighing ingredients instead of this truly weird scooping levelling lesson. It’s so inconvenient and inconsistent.
Great video, but if I could make a suggestion it would be to include metric measurements. It also makes instructions on how exactly to fill a measuring cup obsolete and may be helpful for an international audience.
I use banana bread that’s a day or 2 old to make french toast. DELICIOUS!
