    Following a printed recipe for stock? Interesting…I just raid the freezer for meat/bones, then see what I have in the crisper drawers….toss it all in a stock pot and go. lol

    His stock needs chicken feet and/or trotters, IMHO. Better texture.

    I'm sure the stock was fabulous but can't believe that Brad would determine all that meat garbage, effing crazy. And the vegetables would have been delicious too. It's also just as ridiculous to think Bon Appetit doesn't have a fine mesh sieve lying around somewhere for people who can't figure out how cheese cloth works. BTW, it's better to strain the soup while still a bit warm; much of the fat would have clung to the food stuff and the rest would be easily scraped off once chilled.
