    I like to make my biscotti with some vegetable oil to make it softer but not too fatty and be a bit more conscious with my suga usage so my diabetic grandfather can enjoy them. Sugar substitute are always out of stock when we do groceries at home.

    I watched a Food Network video on Biscotti several years ago, and from what I remember, Valerie Bertinelli said it should be pronounced "bish-scotti". And, judging by her last name, she married an Italian.
