Hello Shelby. I so very much enjoy your cooking videos. Thank you for those. This recipe looks delicious and one I'd love to try but I have one problem I hope you can advise me on. I live "very rural". In other words it is very hard for me to fInd any Mexican type chillis other than jalapeรฑos. But on my last trip to the city I did run across some powdered guajillo chilli powder. Could you please advise how to use the powder rather than having to boil and strain the actual peppers. That sure would help. Thank you.

If you remove the seeds from the chilies, the water is never bitter! As soon as I get the bags of dried chilies I remove every seed and then shrink wrap them to keep them fresh.

My husband is a truck driver and when he goes to California. He always eats from the taco trucks. He says it's the best Mexican food you can get.
