    Mason Jar Pumpkin Bread🎃

    Ingredients

    2/3 cup shortening

    2 2/3 cups sugar

    4 eggs

    2 cups canned pumpkin

    2/3 cup water

    2 1/2 cups flour

    2 – 3 teaspoons baking powder

    1 teaspoon cinnamon

    1 teaspoon ground cloves

    1/2 teaspoons salt

    2/3 cup nuts

    Spray 8 mason jars with non-stick spray

    Directions

    Cream together shortening and sugar, beat in eggs, pumpkin and water. Sift together flour, baking powder, salt and spices. Add to pumpkin mixture. Stir in nuts. Pour mixture into greased wide mouth, pint jars filling 1/2 full.

    Bake at 325°F for 45 minutes. When done, remove one jar at a time, wipe sealing edge with paper towel or cloth, and screw cap on tightly. The heat will vacuum seal the jar and the bread will keep up to 1 year.

    VARIATIONS

    Substitute for pumpkin, one of the following:

    1 bag whole ground fresh cranberries plus 1 can whole berry cranberry sauce

    1 3/4 cup applesauce plus 1/4 cup pineapple

    1 3/4 cups applesauce plus 1/4 cup raisins

    2 cups mashed bananas

    2 cups apricots

    2 cups shredded zucchini

    2 cups chopped fresh peaches

    Hi, thank you so much for letting us all into your life. We're trying to live as sustainably and self sufficiently as we can, which meant we took the plunge and ordered a pressure canner from the states to be shipped to the Scottish Highlands a couple of years ago. Alot of US YouTube and books later I have gone from 5 freezers to 3 by canning loads of our meat, veg and fruit!! Been trying your applescrap vinegar, 1st batch went really mouldy…but the hens loved the fruit. Starting to get the same on my next batches, though nowhere near as bad. Everything was clean, I've cleaned off mould and scummy liquid and recovered, they both smell really good, but I know that may not mean they are. What's your thoughts….help. thank you so much xx

    Why not pick all you have left in the garden to eat now or preserve? I know you have to be tired of that, though. Does it become food for the animals then? You may still answer this since I'm not through watching the whole video.

    Last year I put a bushel of Ever Crisp apples into the fridge, in bags, and I just finished them up in October of this year. They lasted for just over a year! Bags are the way to go!!!

    We have highs of 88 for the foreseeable future. I’m so jealous of cold weather, but good news is my snack peppers had a second growth after the summer heat ended and they are still growing and should be ready for picking before we get cold weather.

    Love that you showed which apples store best and how to store them. Reminds me of putting up apples in the basement with my Mom. She just put in a wooden bin, and we would have to look through the bin. I did not know that with the bags. I'll have to invest in a few. Thank you.
