I'll have to try this in the oven. Right now I have one going in the crock-pot with sauteed onions and mushrooms, and one jar of pork gravy. The stuff in my oven always comes out over cooked and dry….. I think the temp settings may be off and have an oven thermometer coming. Thanks for the ideas!

I changed up the spices for the rub, garlic, onion , red pepper flakes, salt and pepper, crushed peppercorn and garlic rub and bell pepper herb rub. I rubbed the pork down with melted butter and oiled the pan. Rolled the pork in the rub and placed in a pan to roast in the oven at 350 for 30 min's. After 20 min's I added chopped onion and basted the pork, smells great, back to the oven for the remainder of the time. I served up seasoned green beans and mashed creamed potatoes, yum!
