Slice a large yellow onion into thick onion rings. Arrange them on the pan, where the meatloaf will go.. Then place the meatloaf on top of the rings.
Also agree don't overcook the garlic.

I didn't realize this was the Jenny Jones that had a TV show…. this recipe looks great.
I always use a loaf pan to shape it, THEN i turn it upside down in a 13 by 9 glass casserole dish. this allows oil to drain out and is easy to clean.
Holy moly, who is coordinated enough to EVER use all of those stove top burners at once!!! Not me! 😄 Count them…

I've made this meatloaf over the years and it is by far the best I've given the recipe to a few people but they just can't believe the ingredient

I made this and it is the best meatloaf I have ever had, definitely added my garlic after the onions were about done otherwise it was amazing!
