Congratulations on 500K!!! I started watching the channel because I've had some great food from the region and was interested in learning more. I kept watching because all of you clearly put a lot of love and care into your recipes and videos. Plus I've been a vegetarian for 29 years (when did I become middle aged?!) and, while I can certainly make dishes vegetarian on my own, I'm thrilled that you are willing to teach your audience a wide spectrum of dishes to satisfy a lot of different dietary styles. (And after this video I'm now SO HUNGRY even though I just had dinner! Bahar–I was that "asshole student" too. Nerds of the world UNITE! πŸ˜‚)

First, congratulations. Your channel is my weekly reminder of everything (and everyone) that's dear to me in Turkey. I went from just using it as a transport vehicle to put me back to Antalya in my mind, to knowing what to taste and which spices to buy when I went back, to seriously thinking I should just move there. You represent not only the amazing cuisine of your country, but the fun, warmth and friendliness I remember. It's like being back in Hasan's kitchen or making mantΔ± with his family. Additionally, I'm planning on starting a Youtube channel and the way your team is clearly one big family gives me a template of what I want to strive for as a teacher. Thank you.

Congratulations on reaching 500,000 subscribers, Refika & team! Thank you so much for all these vegan recipes, as well! My household is lacto-ovo, but trying to eat vegan, as often as we can, so I really appreciate it. Why do I love your channel? Because you present excellent recipes in an engaging, entertaining manner, and your videos are high quality even while you remain completely genuine. By the way, sour, green plums are called greengage, in English (and, nobody asked, but they're gojeh in farsi, which might have something to do with the etymology of the English name, as the plums originate in Iran), and I agree, they're magic.
