If you decide to make tamales to sell in high quantities check about getting a tamale making machine. My sister-in-law did that for years by herself with her husband's help. They made them stored them raw in the freezer wrapped in waxed paper tied with a string. Then as her orders came in she cooked them. The tamales wrapped in wax paper come out very clean and you can lay the bundles flat on top to cook.

You can even add the spices to the salsa roja.
You should try adding some cumin, black pepper and a dash of oregano to your salsa. It will go to another level of taste.
