    If you decide to make tamales to sell in high quantities check about getting a tamale making machine. My sister-in-law did that for years by herself with her husband's help. They made them stored them raw in the freezer wrapped in waxed paper tied with a string. Then as her orders came in she cooked them. The tamales wrapped in wax paper come out very clean and you can lay the bundles flat on top to cook.
