I tried this last night and it was amazing!! I had to stop by 3 different Asian stores before I found Taro leaves but it was worth it. The only thing I did different is I scored my pork butt prior to seasoning. I took full credit for the recipe because I loved all the compliments!

Thanks for the video, Harry. I'm making this tomorrow on a Kamado Joe Jr. I will be wrapping it in banana leaves. I don't want to over smoke, but I also want to have enough smoke to get through the leaves. How many Kiawe chunks should I use?

Sorry to bother you, but I am facing a dilemma. I watch all your videos. Every last one. And I take notes and use the info.
I am ready to buy a new smoker. I want a pellet model.
I don't want the Weber Smoke and Grill. But a food offset model is what I am looking for. It doesn't need to be able to grill, although that would be a plus.
Traeger? Yoder? Myron Mixon? Something else?
I don't cook for huge numbers of people, but I would like to be able to do a suckling pig or 3 pork butts or 2 briskets at once.
Any thoughts?
I already own a Weber kettle, as Smoke Vault 24" gas smoker, a Weber Smoky Mountain, a PK grill, and a really nice Broil King gas grill.

Taro leaf? I've never seen that used before. Usually I've seen Ti and Banana, but this is the first time I've seen the use of Taro – really interested to know how that changes the flavor. I'm gonna have to give it a try the next time.
No taro or banana leaves in canada. Just have to use maple and cannabis leaves
