The yeast would eat the sugar so actually there would have been no sugar to burn! Sugar helps activate, bring alive the yeast!
I use to make my own dough all the time,but since I found 10 inch pita breads they work perfectly,not a big traditional pizza person but love the chicken bbq pizza and Hawaiian pizza.🔥👍
I would recommend not bringing the olive oil and salt directly into contact with the yeast. Salt removes moisture from the yeast, which it needs for fermentation and the oil locks the yeast in.
In my experience, I would only add the oil and salt after the water has been kneaded with the yeast and flour. This definitely reduces the risk of the yeast being damaged.
Incidentally, I learned to be a baker. (In Germany this is a three-year apprenticeship with a journeyman's certificate as a conclusion). And I think that nobody can deny that the bakery trade from Germany is leading.
The honey or sugar is to feed the yeast.

Another trick for where to let your dough rise is in the oven with the light on. Creates just enough heat for the rise.
