The only thing I will say is I watch a lot of Jacques Pepin and he said to not break your eggs on the edge of a surface. He said that pushes the shell inside your egg and can break the yoke and get shell in your eggs. He said break them on a flat surface that way the shell stays outside egg and you don't break the yoke. I have been cracking eggs wrong my entire life. LOL
