    Not sure who started the whole theme of bbq sauce doesn't go with brisket. Here in south Texas i've never seen brisket offered without bbq sauce. It's always homemade, never from a bottle. I won't smoke a brisket without making a batch of bbq sauce. Same goes for pulled pork.

    Should have turned on the jacuzzi jets to tenderize the briskets! I’m guessing an aluminum foil lining in the smoker would have prevented the grease fire. Briskets looked great!
