As a Ghanaian in germany I understand what she means we make fufu different here in germany then in Ghana cuz we don't have the ingredients here and it's cheaper to just use potato flour instead of the traditional ingredients that's aren't available here sadly but I like both of it cuz I grew up with the potato fufu

Authenticity is sooo.. Overrated!! then why use gochujang for bibimbap? Those who live outside of Korea should Use some local chilli paste and spices. Will that dish remain bibimbap anymore??

Fully agreed. Can we please stop calling out people for "food appropriation" or whatever nonsense now? Just call them out on being bad – there's certainly enough of that.

This actually is quite deep. But another thing i wanna know. If cuisine is a techniqe tgen it is a techniqe to give a sepecific taste as a result. How do we replicate the taste.
(a great example is cooking sushi/gimbap in india. I dian aged rice, basmati, are not at all sticky. You can spend about 5 bucks for the seeweed paper abd sesame is practically free. But how do you give the taste of sushigimbap with an indian pantry ?)

There's a place for authentic cuisine and a place for locally sourced seasonal cuisine using inspiration from old cooking styles. Doesn't have to be one or the other.

no, no, no, if you don't scavange that one vegetable which inly grows in a specific place, in a specific, weather, in a specific country then its not authentic and that makes it cultural appropriation for dirtying the culture

Thank you for saying this. I'm tired of cultures gatekeeping food from everyone and saying "you're doing it wrong" or "you can't eat that". Its supposed to be shared, its supposed to be enjoyed, it doesn't have to be perfect. Everyone should be able to make whatever food they want. You are allowed to change it however you want because you are the one who will be eating it. You are allowed to experiment with food however you want.
