The use of the "butcher" knife is amazing. Using pork, chicken, shrimp, the butcher knife turns cuts of meat and shrimp into a texture of paste, so finely is it chopped. We are so warned of the dangers of not cooking pork thoroughly, it was something to see the meat steamed, within this texture,
and thoroughly cooked. I'm looking forward to making this because they're delicious and freeze so well ! A large number can be made, frozen, used anytime, and there's something delicious at your fingertips !
