Like us Polynesian's we do this too. In Tonga we call it Umu (ooh-moo). Most Polynesian's call it Umu but there are some islands that call it different for e.g: like Fiji (Lovo), Hawai'i(Imu), New Zealand(Hangi but they cook it below surface level). Hope one day of you're reading my comment that you get a chance to try Umu. It'll change your thought around fall off the bone meat.

Lived in Cuzco for 5yrs, after the rains we would pull the top 3-6" layer of clay, make an oven. Light a fire, let it get super hot and white coals. Once ready throw in potatoes and carne. Crush the oven down, throw sand over it and seal for 1hr.
The dirt doesn't stick if done correctly but that doesn't matter, who doesn't love a little Peruvian clay with their meal
