I am so curious… I noted you used the white sweet potatoes…. have you tried the orange or I think they are called garnet (still orange colored)… and did it make a difference to you or – just what you had on hand? 🙂 Thanks!
I made this today for Thanksgiving. I did add some leftover tofu ricotta to it and topped it with vegan parmesan because I was out of oats. This is the best veggie lasagna I've ever had!

I tried this and it took me almost 5 hrs. I thought i set my oven to 400° so it took another hr to dried up the lasagna. The topping came out kind of wet and crample. So after all i think ill learn to prep earlier and set my oven to 400. Cant wait to taste it.
