Steps to make veggie broth:
1. Save clean vegetable scraps (e.g. carrot peels, onion peels, mushroom stems) in a freezer bag in the freezer.
2. Once the bag is full, or you need broth, simmer scraps in water, along with a bay leaf and some peppercorns.
3. After an hour or so, strain the solids out of the broth (filter through a coffee filter or paper towel if you want to be very thorough).

A little tip do since i like my Soup a little more thicker i add a cup of Broth and then a cup of plant Milk i use soy it also bumps up the protein so bonus

Although he says thereβs no set recipe I do believe celery is a staple, Iβve had it without and didnβt taste as good. Itβs not everyoneβs cup of tea but you canβt deny the weird taste is good

I watched this in bed this morning because I was feeling lazy, and then I went outside and discovered it was finally one of our first cool days here in Texas! You inspired me to make soup tonight π I do a recipe somewhat similar to this with lentils and chickpeas, and pretty much any vegetables I can find. I like to blend a portion of the soup and put it back in the pot to give it more of a stew consistency. I also love garnishing with fresh ingredients like avocado or chives (and nooch cause we gotta protect those heat-sensitive B-vitamins) to just give it that extra pop. Thanks for the inspiration!
I love the minestrone from olive garden which I think it actually vegan even from them! but they add kidney beans and its super good!

Can you add any pulse pasta to soup without boiling and draining separately? My pulse pasta says to boil and drain before use.
