    Iā€™m torn. I currently use a gas vertical smoker and gas grill with good success. I like that when I start it it is ready to go more or less immediately. Iā€™ve been tempted by the pellet grills like the YS640-S that chef Tom uses so much but Iā€™m worried that when the electronics fail Iā€™ll be left with a big and expensive yard decoration. Videos like these are making me come around to the idea that using charcoal doesnā€™t mean cooking has to be an all day adventure.

    Iā€™m a fairly new KJ owner. I got a Joe Jr. in early June 2021 and a Big Joe in early September. I have gotten some good results but have a LOT more to learn. A ā€œfundamentalsā€ video like this is huge for me because itā€™s a skill I can use across many recipes. I would love to see more! Iā€™m a dedicated follower of the Kamado Joe channel and Ericā€™s great videos. Iā€™m a dedicated follower of the ATBBQ channel too. I hope Tom picks the KJ more often for his videos.

    Big Block charcoal from KJ is absolutely the best. It was the first one I used and once it was out I thought I would shop around and see some of the alternative choicesā€¦.nothing came close!

    Fajita time! I would need to put the other half of the cast-iron grate on for warming the flour tortillas!!!! Add some pico and maybe avocado. Maybe make some chilli con queso go with it all! Nice Tex-Mex meal!
