That is the largest point on a brisket I haver ever seen, and I watch a lot of videos here and have cooked a few myself! Also put aluminum foil in your drip pan.
James, what do you do during a cook on a Kamado, if you need to add more fuel? Do you have to take everything out??
I'd love to see a comparison in time to temp for a hot cook. I love my Big Joe 3, but sometimes I want something that heats up faster for my hot and fast cooks like burgers, but still has the flavor I get from charcoal.

Team No. Too many variables. What about rain? Burns too fast bottom up. Cleaning is a step backwards. Probe positions are just odd.
Not sure it’s the ‘end of the pitmaster’ pitmasters are not home cooks and cook lots. Everyday.

I'm following this closely because I still have the classic 1. I maybe in the market but I do love doing it manually. So for me just cooking what you want will let me know if I get this one or just keep what I already have. As always keep up the informative work. The non connected Joe still works for me.
Very cool smoker, but part of the fun with the Kamado's, at least for me, is building up/maintaining the fire "manually" on a long brisket/butt smoke, it just gives me a sense of accomplishment, lol…Besides, my Big Joe III, Large Green Egg and Joe Jr. are so efficient and maintain stabile temps so well they're practically self-regulating anyway and once dialed in are basically "set and forget" even on very long 14-20 hour smokes when using the Joe III and Egg. I now rarely even use my Yoder YS480s pellet smoker anymore because of this (which was my "first" serious smoker) unless I'm in a hurry-or just feeling lazy AF that day.😂
After my experience with the iKamand (and your glowing review), I am highly skeptical of this new attempt to automate the KJ. That was one of the most buggy, unreliable accessories I have ever tried. And I was surprised that, unless I missed it, you never walked back your great review of it given the widespread consensus of the quality of the product. Hopefully, for those who are looking for a more stress-free way to cook, this attempt is better.
