    When I first started rving in the beginning I learned very quickly that crockpot meals are one of my favorite because they are easy and I do have a double burner hot plate and a air fryer oven that I love using I don't use the microwave unless I absolutely have to or my oven unless I absolutely have to like my dad always told me keep it simple stupid it's a military term it is Wednesday here in Texas and it is raining and getting colder so I am definitely doing Soup for the next couple of days it's pretty funny actually when you have to take a tape measure with you to the grocery store to know what fits and what doesn't in your refrigerator LOL but I've gotten used to it👍👍

    I love the idea of a 5th wheel for us; however, I'm concerned about payload. I have pretty much the exact same truck as you guys (2500 Laramie Longhorn with the cummins and rambox, just different by one model year). My payload is only 1900lbs. A 5th wheel puts more weight on the back of the truck then a bumper pull does and a decent sized 5th will be putting me over the payload limit of my truck. That said, my understanding is the difference between the 2500 and 3500 is pretty much just the leaf springs (on the 3500) vs coil springs (on the 2500). The frame, axles, engine, & transmission are supposedly the same on the single rear wheels. Just something to consider as you discuss it.

    Oh, and I know how much you guys LOVE leaf springs! I probably cause some nervous anxiety just by mentioning it. haha

    It has also got to be easier at WalMart because they seem to have the same ‘geography’ so you spend less time searching for what you need.

    In Arizona, head east to Tucson to see Saguaro National Park and the Arizona Sonora Desert Museum (tip – it’s not a museum, it’s a zoo and well worth your time). Then head south toward Sierra Vista. You’ll find Kart Henry Caverns State Park, Tombstone, Bisbee and the San Pedro Riparian National Conservation Area (it’s on a major bird migration path).

    We like our air fryer for Panko coated chicken tenders and fish, sweet potato fries, meatballs, etc. It’s quick after a long day of hiking. I recommend an Aeropress for coffee. Love the entire state of Colorado!!

    We have a 5th wheel and I highly recommend. Much easier to tow. Go to Trader Joe’s for East fast meals. I leave some in my freezer for such occasions . Their Asian meals are excellent and my Granddaughters love them. Plus they are really cheap. I agree about Phoenix and there is so much to see. They have the most National Parks and monuments of any state

    We have a rice cooker and it will always slightly burn the rice, I've found that cooking rice the same as pasta is very easy.
    Put a pan of water on to boil, when boiling add rice, cook until rice is done to taste, pour into a strainer and drain.

    Oh Kristin, I'm so with John on you getting the 5th wheel… Lol… You'd be amazed by the kitchen alone, but not to mention all of the features you'd be able to have.. 😎

    Have you tried those pie irons? I see lots of RVers rave about them and haven't tried them but am intrigued. We live in Sierra Vista, AZ and visiting Tombstone, Bisbee is super fun. If you haven't camped at Roper Lake up near safford its really beautiful 😍

    I tried those this summer, I had always bought Yukon Gold and pealed my own. I now buy two of each flavors just to have on hand.

    I don’t have room for a regular size frozen pizza, so I buy and bake the same day or buy bread pizza. My friend has a saying, 425°, 14 minutes, dinner. 😁
