I've never made samosas before but now that I know you can make them with rice paper I probably will! I see them at whole foods etc and they're so pricey for something that's made with cheap ingredients, so i try to hold out until i can go to an indian restaurant/grocery. they seem like they would be fun to make and experiment with different filling!

Air fryers really ARE magicians, we miss ours so much. We started cooking just about everything in there- perfect for heating up leftovers if you didn't want them to get soggy in the microwave. We're OBSESSED with Samosas, these turned out fantastic. Now we need to go find some Indian food… lol

Oh my gosh- 100% saving this recipe for when I visit my mom in Florida and can use the airfryer. My boyfriend loves samoas so much but he hasn't had them in forever! He is going to be so excited!!! When you dip the rice paper, do you usually dip it only for a second? I think the last time I made them I dipped them for way, way too long – they fell apart.
Brilliant use of the rice paper sheets to make this gluten free! The potato mix looked sooo yummy, I bet it would be great to have with rice as well. I'll definitely have to give these samosas a try!!
