Food insecurity, economy, the falling apart of social sectors, restriction and segregation of women – things are very very bad in Afghanistan and I had a very hard time mixing politics into the video. People need to keep focus on this country and I'm not sure how to deal with it – is there a responsibility when you do come in?…Perhaps just keeping tabs on your own country and seeing what are the trading partners you are working with? Is that an apartheid state? How do they perform in human rights? How does your own country…Are governments willing to open up thier own borders to help those in the name of freedom? — I know for big imperial powers, they look out for themselves, even if they say otherwise and that deceives their own people and the place they are involved in. I would keep my eyes out for groups that help on the ground. If anyone has any recommendations, please leave a link as well.

I love this!!!!! I do think you should be consulting people from the region you're making the dish, so you're not just telling everyone what you saw in documentaries. They could also tell you more of the actual culture and how they experience it.

Imma be honest, i started the video with a little preconception if does this even matters to me what food is made in afghanistan , but i am proud that that i watched the whole thing because this was a very entertaining video and found great value in the background part of it.

For some countries that will be difficult. I'm from Germany and off the top of my head I can't think of a traditional dish we in the south (meat, sausage, eggs and dairy heavy) or my relatives in the north (more fish and seafood) ate/eat, that is vegan.
Btw. some countries have a diverse food culture (In Germany, too. And it depends on the cultural regions; We agree on the importance of bread and sausage but even these are completely different types). I'm excited to learn how you handle these culinary in country difference.
For Germany I think my region (Schwabian) has the better food (but difficult to veganize) but the north of Germany is underrepresented (food, culture, everything) outside of Germany. So both is fine.
But traditional German food is (typically) not vegan. You can surely find traditional German accidentally vegan recipes but I don't think they will represent the traditional cuisine.
If you decide to follow the road of veganisation for some country, I think it would be the best to ask for recipes from someone from this country. Some veganisations of traditional German food you can find only are just horrible :P. And I think the same goes for many countries without representative traditional vegan recipes.
This is the perfect series for me. I definitely prefer to learn about different cultures through the food as a way to dip my toes in the water about individual countries

The geopolitics are thorny and you starting with a hard one from that perspective. I admire your effort to address that.

When you get to Argentina it might be a bit complicated because most of the famous traditional dishes include beef.
I recomend you to search "humita en olla" or "empanadas de humita" (both corn based although one is in a pot, the other is a typical empanada filled with that). Potato empanadas (similar to knishes but I think is just a coincidence) and chard "buñuelos" (a kind of croquete).
This options are quite traditional and are not just meat free adaptations of other traditional dishes.
