    Do you create new meals (new recipes) everytime? or are you using recipes that you are used to make ? or both? i had to get realllllly creative to make loe budget recipes here! i loved the experience haha thank you your recipes look really delicious! i wish our dairy products in canada were lower price! cream cheese, parmesan, cheddar, yogurt, milk, cottage cheese etc are so expensive.. minimum 3 to 4 $ each!

    Instead of using the amount of filling to just throw on top of your enchiladas, you could have made a Mexican rice bake for another dish. You had most of if not all of the ingredients to create this dish. I know everyone makes this dish a little differently, but it can easily feed 8 people especially with a guacamole salad, chips & salsa or cheese dip. I googled it and this was name it was officially called: Taco Black Bean and Rice Casserole. This way you could have turned your chicken into “ Chicken Tortilla Soup” for another meal…used your macaroni to make either buffalo chicken pasta, or bought a bottle of Parmesan& Garlic sauce( $2.12) GV brand to make a different dish from all the Mexican flavor…using a chicken breast, this sauce, little spinach( fresh or frozen, chopped) all created in the slow cooker. When I buy chicken, chicken enchiladas with sour cream sauce is always on the menu…plus spinach & mushroom enchiladas using the same sauce. It makes enough to freeze some too for a freezer meal. Just some ideas for everything you bought and had on hand. What surprises me is everyone seems to show cooking with black beans, but no one ever shows how to make black bean soup. It is easy and very tasty. Then after eating it as soup, it can be cooked down to make refried bean mixture to make bean burritos, serve like in restaurants, base for a Mexican pizza, tostadas etc.

    Everything looks fantastic and easily eaten by a veggie like me. I’ll just use cooked pinto or black beans in the crockpot meal. I second the mash potato tacos. Surprisingly good on corn tortilla and a fast meal. Or a quick egg hash with crispy potato cubes and salsa on top.
