I would cook the sweet potatoes in the instant pot. Super easy and they come out soft and would be easy to scoop. I find that sometimes microwaving any potatoes makes them dry and tough. Harder to get right.

The recipes sound good except for the sweet potatoes. I don't think I could do sour cream, bacon & cheese on those. I love them with butter & brown sugar (maybe a little cinnamon).
