I used the Palmini Rice to make egg fried rice tonight. It was delicious! Finding ways to enjoy my favorite foods Keto style is a game changer and helps to keep me from cheating. I feel the same way you do about the lasagna palmini pasta. I may try boiling it for a bit first and attempt it again. I still have 3 bags of them to use. The first dish I made with the palmini linguine came out the same way as the lasagna ones. So the second attempt I boiled them and then cooked them with my dish a bit longer. Perfect! Seems to be the key to the palmini brand, cook them longer or boil them first.

Preboiling prior to assembling the lasagna is key from what I've been told.. Recommended 7-8 mins. I do this with Trader Joe's Hearts of Palm pasta and it's amazing.. Also Trader Joe's Hearts of Palm Pasta Linguine has (0) g's of Sat-Fat, (0)-Trans Fat, (0)-Cholesterol, (0)-Sodium… Only (1g) -Sugar, no added sugars, (2 g)-Fiber, and (4g)-Carbs. I love that their Hearts of Palm Pasta doesn't have the sodium that some of the other brands do.. Especially if you are using a jar sauce which usually has lots of sodium already..

you should redo the lasagna as baked spaghetti. The hearts of palm do tend to separate into those noodle shapes anyway so I bet if you just replaced the lasagna noodles with the normal spaghetti noodles, you'd love the recipe

The lasagna "noodles" might be better if they were cooked ahead of time — I would drop them in boiling water 5 minutes or so to soften them instead of soaking them in cream.

Haven't seen palm heart pasta in shops here in the UK. Looked on Amazon, they're available but really pricey… 2 tins of Gefen spaghetti for 12GBP (about 16USD). I don't know how that compares to the prices there. Your meals look super yum! Sadly I'm too penny-pinching to be buying these pasta, but maybe I'll try other alternatives. 🙂

I made lasagnas (in individual casserole dishes) with the palmini. I boiled them for a while instead of soaking them in the cream. I didn't think they had the texture of pasta, but they were good. I would use it again.
But I definitely want to try that Green Fit pasta and I'll probably use that creamy chicken casserole. that looked especially good.
